Conventional methods


Slow refrigeration: thawing at ≤ 4 °C (≤ 39 °F) in cold rooms; takes over 24 hours for large blocks.
Cold water immersion: ideal for small packages (≈ 1 lb in ≈ 1 hour), but dilutes juices and requires constant water replacement.
Forced air: warm air circulation (+ 1 °C – + 20 °C / 34 °F–68 °F) reduces water contact, with thawing times of 6–12 hours and dedicated plant space.
